Hey, I just wanna make sure that I understand correctly how this works. Does my bid have to be less than the cheapest current buyout? Does it matter what MY buyout price is?

Also how does this work for items where there are listings with different stack sizes?

If the frontpage of a normal AH scan is what you want, then your BID has to be below the BID of all other players.
It doesn't matter what your buyout price is (only addons will be able to sort on buyout price per unit)
The standard AH-search has no consideration for stack size, so a bid on a stack of one is compared to the bid of a stack of 20

Has this always been like this? (I was away from wow for a year or so). So this is why i see so many single stack listings? Its annoying as hell when you have your addons disabled for raiding and have to sort through all the single shit to buy your stack of food!

Yes it has, but posting 100 singles is now a matter of one drag-and-drop and a few settings, where it used to be 100 drag-and-drops and a few settings
